when life gives you limes, make keylime pie. ♥

Remember when I visited Minnesota? (Kudos to you, if you do! That was back in my early blogging days..)

Well, my mom took the same trip this past week to visit my uncle, who has cancer. :( She has been gone for five days so far, and will be gone for two more. Thus--my sister and I have the run of family meals for the time being. And pretty much everything else. If ya know what I mean. ;)

It's been fun, planning out the meals and preparing them. Running to the grocery store by ourselves to get desperately-needed last minute items such as ice cream and chocolate milk. :] Also, I decided the other day that I would make, for the first time in my life, a Key Lime Pie. And so, I did.

The result? Amazingness. And an inspired blog post containing the recipe. ♥


delectable key lime pie

for the crust:
1 1/2 c graham cracker crumbs
1/3 c sugar
6 tablespoons melted butter
combine, shape in 9" pie plate, and bake at 375º for 8 minutes.
remove and cool.

for the filling:
14 oz. sweetened condensed milk
1/2 c key lime juice
3 egg yolks
combine and pour into cooled crust. bake at 375º for 15 mins.
remove and chill until serving.


MmmmMMmm. Tastyness.

..Of course, being the ultimate blond that I am, I failed to get photos of the actual baked finished product. I also forgot about getting the usual professional food photographer's single tantalizing photo of a just-bitten-into-piece.

Maybe that's because it went down so quickly? Besides, I know we all have good imaginations and can visualize each of these stages of said Key Lime Pie.

Or there's the option of making it so you won't need imagination. :]

  5. Lucia, that looks absolutely amazing. *longing sigh* If I wasn't just about to go and eat dinner, I would seriously consider searching pantry, fridge, and freezer to see if we have the ingredients. Mmm...
